别总说秋乏是犯懒，这4道家常高钾菜换着吃，腿脚有力浑身舒坦

入秋之后，不少人总觉得浑身没劲、腿脚发沉，走几步路就想歇着，家里人还常打趣说是“犯懒”。其实，这未必是懒，很可能是身体在提醒你：该补钾了。钾元素对维持肌肉力量和神经传导至关重要，一旦缺乏，就容易出现疲乏、无力、精神不振等表现。与其硬扛着，不如从日常饮食入手，把高钾家常菜端上餐桌。下面这4道菜，食材普通、做法简单，换着吃一阵子，你会发现腿脚有劲了，整个人也舒坦不少。

【第一道菜：土豆炖牛肉】

所需食材：牛腩500克、土豆2个、胡萝卜1根、洋葱半个、姜片3片、八角1个、香叶2片、生抽2勺、老抽1勺、料酒1勺、盐适量、食用油适量。

步骤：

1. 牛腩切成大小均匀的块，放入清水中浸泡半小时，中途换一次水，泡出血水后捞出沥干。

2. 土豆和胡萝卜去皮，切成滚刀块；洋葱切丝备用。

3. 锅中加冷水，放入牛腩块，加料酒和两片姜，大火煮开后撇去浮沫，继续煮两分钟捞出，用温水冲净。

4. 炒锅烧热倒油，放入洋葱丝、姜片、八角、香叶，小火煸出香味。

5. 倒入牛腩块翻炒，加入生抽、老抽，炒至肉块上色均匀。

6. 加入足量热水，没过牛腩，大火烧开后转小火炖40分钟。

7. 放入土豆块和胡萝卜块，继续炖20分钟，最后加盐调味，大火收汁即可。

1. 牛腩焯水后用温水冲洗，避免肉质突然遇冷收缩变硬。

2. 土豆和胡萝卜不要过早下锅，否则容易炖烂不成形。

3. 收汁时留一些汤汁拌饭，味道更浓郁，但注意盐要最后放，以免过早加盐使牛肉不易软烂。

【第二道菜：蒜蓉菠菜】

所需食材：菠菜400克、大蒜5瓣、食用油适量、盐适量、蚝油半勺、香油少许。

步骤：

1. 菠菜择去老叶和根部，放入淡盐水中浸泡10分钟，再用清水冲洗干净。

2. 大蒜去皮，切成蒜末，分成两份备用。

3. 锅中烧开水，加少许盐和几滴食用油，放入菠菜焯烫30秒。

4. 捞出菠菜，立即过凉水，挤干水分后切成段，摆入盘中。

5. 炒锅烧热倒油，放入一半蒜末，小火炒至微黄出香。

6. 加入蚝油和少许清水，煮开后关火，调入适量盐。

7. 将炒好的蒜蓉汁淋在菠菜上，撒上剩余生蒜末，滴几滴香油拌匀即可。

2. 焯水时间不宜过长，30秒左右即可，否则菠菜会过于软烂。

3. 生熟蒜末搭配使用，香味更有层次，不喜欢生蒜辛辣味的可以全部炒熟。

【第三道菜：香菇烧豆腐】

所需食材：北豆腐400克、干香菇6朵、青椒1个、红椒半个、生抽2勺、老抽半勺、白糖少许、水淀粉适量、食用油适量、盐适量。

步骤：

1. 干香菇提前用温水泡发，泡好后挤干水分，切成厚片，泡香菇的水留用。

2. 北豆腐切成厚约1厘米的三角块，用厨房纸吸干表面水分。

3. 青椒、红椒去籽，切成菱形片备用。

4. 平底锅倒油烧热，放入豆腐块，中小火煎至两面金黄，盛出备用。

5. 锅中留底油，放入香菇片煸炒出香味，再加入青红椒片翻炒几下。

6. 倒入煎好的豆腐，加入生抽、老抽、白糖，再倒入适量泡香菇的水。

7. 中小火烧3分钟，让豆腐入味，最后用水淀粉勾芡，加盐调味即可。

3. 勾芡不宜过厚，薄薄一层即可，避免掩盖豆腐和香菇本身的鲜香。

【第四道菜：紫菜虾皮蛋花汤】

所需食材：紫菜1小张、虾皮1小把、鸡蛋2个、香葱1根、姜丝少许、盐适量、香油几滴、白胡椒粉少许。

步骤：

1. 紫菜撕成小块，放入碗中用清水泡开，洗去表面杂质后捞出沥干。

2. 虾皮用清水冲洗一下，去掉多余盐分和杂质；香葱切葱花。

3. 鸡蛋磕入碗中，用筷子充分打散，打出细密泡沫。

4. 锅中加适量清水，放入姜丝和虾皮，大火煮开。

5. 水开后放入紫菜，继续煮1分钟，让紫菜和虾皮的鲜味释放出来。

6. 保持锅中微沸，将蛋液缓缓淋入，边倒边用筷子轻轻搅动，形成蛋花。

7. 加盐和白胡椒粉调味，关火后滴几滴香油，撒上葱花即可。
