寒露前不吃肉也要吃这“五菜三汤”，润肺养胃，安稳过深秋

寒露一过，露水都带着沁骨的凉，秋燥也跟着往肺里钻：早上起来嗓子干得像卡了砂纸，胃里总发沉没胃口，稍不注意就咳两声。老一辈总说“寒露补得对，深秋不受累”，不用山珍海味，就应季的五菜三汤，全是润燥养胃的好手，哪怕这段时间不想碰肉，照着吃整个深秋都舒坦。今天就把这8道菜的家常做法全说透，新手看一遍也能上手。

一、蒜蓉豆豉蒸肉

食材：

芋头、梅头肉、豆豉、蒜头、小米辣。

做法：

1、梅头肉切片备用；芋头切粒铺在盘子底部。

2、碗里放蒜蓉、豆豉、小米辣，淋入热油，然后加1勺盐、1勺鸡粉、1圈生抽、1勺蚝油搅拌均匀。

3、将料汁与肉搅拌均匀，然后加3勺生粉，抓至粘稠状态。

4、腌好的肉铺在芋头上面，中火蒸25分钟左右即可，出锅前撒入葱末即可。

二、决明子菊花炖瘦肉汤

食材：猪瘦肉250g，决明子8g，菊花5朵，生姜2片，红枣2颗，食盐

做法：

1.瘦肉切大块，冷水下锅焯水，撇去浮沫，温水冲洗干净。

2.决明子、菊花简单冲洗；红枣去核。

3.砂锅中放入瘦肉、姜片、决明子、红枣，加足量清水，小火炖60分钟。

4.出锅前10分钟放入菊花，加盐调味，滤掉药渣，喝汤吃肉。

三、山药莲藕排骨汤

所需食材：铁棍山药1根、莲藕1节、猪肋排500克、生姜4片、枸杞15粒、料酒2勺、盐4克、清水适量。

步骤：

1. 排骨剁成小段，冷水下锅，加料酒和2片生姜，煮开后撇去浮沫。
2. 捞出排骨用温水冲洗干净，沥干备用，避免用冷水冲导致肉质变柴。
3. 莲藕去皮切滚刀块，泡入淡盐水中防止氧化变黑；山药去皮切段。
4. 将排骨、莲藕、剩余姜片放入砂锅，加入足量热水，大火烧开。
5. 转小火慢炖40分钟，期间不要频繁开盖，保持汤色清亮。
6. 放入山药段，继续炖20分钟，直到山药和莲藕软糯。
7. 出锅前5分钟加入枸杞和盐调味，搅匀后关火焖2分钟。

四、红烧排骨

所需食材： 猪肋排800克、生姜一块、大葱一根、八角两棵、桂皮一小段、香叶两片、冰糖30克、生抽三勺、老抽一勺、料酒两勺、盐适量、食用油适量、清水适量。

步骤：

1. 猪肋排剁成寸段，放入清水中浸泡半小时，中途换水两次，充分泡出血水后捞出沥干备用。
2. 冷水下锅，放入排骨，加入姜片、葱段和一勺料酒，大火煮开后撇去浮沫，继续煮两分钟捞出，用温水冲洗干净。
3. 锅中倒入少许食用油，放入冰糖，小火慢慢翻炒至冰糖融化并呈现枣红色糖色。
4. 迅速倒入焯好的排骨，中火快速翻炒，使每一块排骨均匀裹上糖色。
5. 加入姜片、葱段、八角、桂皮和香叶，炒出香味，再淋入料酒、生抽和老抽翻炒上色。
6. 倒入足量开水，水量没过排骨，大火烧开后转小火加盖炖煮四十分钟。
7. 待排骨软烂后，加入适量盐调味，转大火收汁，汤汁浓稠即可出锅装盘。

五、红烧鲫鱼

所需食材：鲫鱼2条、姜片5片、蒜4瓣、葱2根、干辣椒2个、生抽2勺、老抽半勺、料酒1勺、香醋1勺、白糖1小勺、盐、白胡椒粉、食用油、热水适量。

步骤：

1. 鲫鱼去鳞去腮去内脏，腹内黑膜刮净，两面各划三刀，抹少许盐和料酒腌10分钟。
2. 锅烧热后用姜片擦锅，倒油，油热后撒一点盐，放入鲫鱼中小火煎。
3. 一面定型金黄再翻面，煎至两面微黄，盛出或拨到锅边。
4. 下姜蒜、葱白、干辣椒炒香，注意火别太大，避免香料焦苦。
5. 烹入料酒和香醋，加生抽、老抽、白糖，倒入热水至没过鱼身。
6. 大火烧开后转中小火炖8分钟，用勺把汤汁不断淋在鱼身上。
7. 汤汁变浓时加盐、白胡椒粉，撒葱花，轻晃锅收汁后装盘。

六、核桃芝麻糊

所需食材

黑芝麻一百克、核桃仁五十克、糯米粉五十克、冰糖适量、清水适量、牛奶可选。

步骤：

1. 黑芝麻和核桃仁分别放入干净的炒锅中，用小火慢慢焙炒，炒出香味后盛出晾凉，注意不要炒糊。
2. 将炒好的黑芝麻和核桃仁放入料理机中，打成细腻的粉末状，如果喜欢颗粒感可以稍微打粗一些。
3. 糯米粉放入炒锅中，用小火慢炒至微微发黄，散发出米香味，盛出备用，这一步能让芝麻糊更加浓稠。
4. 将打好的黑芝麻核桃粉和炒好的糯米粉混合在一起，搅拌均匀，装入密封罐中保存，随吃随取。
5. 取适量混合粉放入碗中，加入少量温水调成无颗粒的糊状，注意水不要一次加太多。
6. 锅中加入适量清水烧开，倒入调好的糊，边倒边搅拌，转小火煮三到五分钟至浓稠，加入冰糖调味。
7. 煮至冰糖完全融化、芝麻糊顺滑冒泡时关火，盛入碗中，喜欢奶香的可以加入少许温牛奶拌匀。

七、菠菜猪肝汤

食材： 菠菜一把、猪肝150克、姜丝、枸杞一小撮、盐、白胡椒粉、香油。

制作流程：

1. 猪肝处理要仔细。 猪肝切薄片，放流水下冲洗五分钟，直到水变清。然后加姜丝、一点点料酒和淀粉抓匀，腌10分钟。这一步去腥彻底，汤才清。
2. 菠菜焯水。 菠菜洗净切段，锅里水烧开，把菠菜丢进去烫20秒立刻捞出。这一步能去掉草酸带来的涩口感，汤头更柔和。
3. 煮汤。 另起一锅清水（或高汤），加几片姜烧开。水滚后把腌好的猪肝片一片片下进去，别搅动，等猪肝变色定型。
4. 最后下菠菜。 猪肝煮两分钟就熟了，这时候把焯好的菠菜和枸杞放进去，加盐和白胡椒粉调味，关火，滴两滴香油。

八、清蒸鲈鱼

所需食材： 新鲜鲈鱼一条（约500克）、生姜一块、大葱一段、料酒两勺、蒸鱼豉油三勺、食用油两勺、盐少许、红椒丝少许、香菜少许。

步骤：

1. 将鲈鱼去鳞、去鳃、去内脏，用清水反复冲洗干净，特别注意鱼腹内的黑膜要彻底去除，那是腥味的主要来源。
2. 用厨房纸巾将鱼身内外擦干，在鱼身两侧各划三刀，方便入味，然后在鱼身上均匀抹少许盐和料酒，腌制十分钟。
3. 生姜一半切片，一半切丝；大葱取葱白切段，葱绿切细丝；红椒去籽切细丝，一同泡入清水中备用。
4. 在蒸盘底部铺上姜片和葱段，将腌好的鲈鱼摆放在上面，鱼腹内也塞入几片姜和葱段，去除腥味。
5. 蒸锅加水烧开，水沸后放入鲈鱼，大火蒸八分钟，关火后再虚蒸两分钟，切忌蒸过头，否则鱼肉变老。
6. 取出蒸好的鱼，倒掉盘中多余的水分，拣去姜片和葱段，在鱼身上铺上葱丝、姜丝和红椒丝。
