蒸菜别只会蒸蛋！9 款荤素做法，肉嫩菜鲜，轻松搞定晚餐

一到夏天就不再愿意做饭了，油烟气也会让人食欲不振。

那就来试试蒸菜吧，把菜准备好直接放到锅里面去，设定好时间就可以不管它了。

几乎没有油烟，食物营养和香味都被保存了下来。

今天要做的九道家常蒸菜，看完就可以动手做了。

01

山药蒸鸡翅

主料：鸡翅，山药

配菜：胡萝卜，口蘑，葱姜

调味料：酱油，食用油，玉米淀粉

1.鸡翅切成两半，放上葱姜，加入适量的酱油，食用油，玉米淀粉抓匀腌制二十分钟左右。

2.碗底放上口蘑片，山药片跟胡萝卜片也放上去，再放上腌制好的鸡翅，不需要加水。

3.冷水下锅，蒸25分钟左右就可以出锅了。

我家孩子的最爱就是这道菜了，鸡翅非常嫩，可以轻松的一抿脱骨，山药里面也充满了鸡肉的味道，粉糯咸香，口蘑更是鲜上加鲜。

蒸好的汤汁用来拌饭，一碗都不够吃。

时蔬蒸鸡腿

主料：鸡腿

配菜：土豆，胡萝卜，香菇，葱姜

调味料：淀粉，酱油，蚝油

1.鸡腿正面跟反面各划两刀，加入葱姜，淀粉，酱油，蚝油抓匀后腌制30分钟。

2. 蔬菜切块放入锅中炒香，盛到碗里，放上腌制好的鸡腿。

3.盖上锡纸后，用大火蒸30分钟。

鸡腿蒸好的皮很滑，肉也很嫩，一撕就能脱骨了。

土豆跟胡萝卜吸收了鸡腿的汁，软绵入味。

偷懒的时候，这道菜就是一顿饭，里面有肉也有菜，连锅都少洗一个。

豆芽蒸肉片

主料：肉片

配菜：豆芽，胡萝卜，葱姜

调味料：淀粉，酱油，食用油

1.肉片加入淀粉，酱油跟食用油中抓匀，腌制十分钟左右。

2.碗底铺上豆芽，胡萝卜丝，上面放上腌制好的肉片。

3.冷水下锅蒸15分钟。

这是最快的，腌肉的功夫就可以把菜准备好了。

豆芽蒸好了脆嫩带甜，肉片滑而不柴，汤汁淡但有味道，15分钟就可以开饭了。

胡萝卜蒸鱼片

主料：鱼片

配菜：胡萝卜，葱姜

调味料：淀粉，食用油，酱油，白芝麻

1.鱼片跟葱姜，淀粉，食用油混合在一起，腌制15分钟。

2.胡萝卜片铺在碗底，放上鱼片。

3.上锅蒸15分钟后取出，放上葱花，浇上热油，加入酱油，白芝麻。

鱼片选用龙利鱼或者巴沙鱼，没有刺，蒸后很嫩。

淋上热油的时候葱香味就散发出来了，胡萝卜吸收了鱼的鲜味，甜丝丝的。

这道菜我自己经常做，很适合给家里的老人吃，软嫩好嚼。

腐竹菌菇蒸鸡腿肉

主料：鸡腿

配菜：腐竹，白玉菇，葱姜

调味料：葱姜，酱油，淀粉，食用油

1.鸡腿去掉皮跟骨头，切成小块，加入葱姜，酱油，淀粉，食用油抓匀后腌制20分钟左右。

2.腐竹，菌菇铺在碗底，放上鸡腿肉。

3.上锅蒸二十分钟就可以了。

这道菜的灵魂是腐竹，把鸡腿跟菌菇的汁水全部吸收，软韧入味。

菌菇鲜美，鸡肉嫩滑，汤汁浓郁但是不油腻，配面条也很好吃。

06

秋葵蒸蛋

主料：鸡蛋，秋葵

调味料：生抽，香油

1.鸡蛋跟水的比例是1:1.5，蛋液里加入热水搅拌均匀，过滤掉表面浮沫，再倒入盘子里。

2.秋葵焯水五分钟，切成小段放入蛋液里。

3.用保鲜膜包好后扎个小孔，蒸十五分钟，取出淋上生抽香油。

这道蒸蛋1:1.5的蛋水比例才是关键，蒸好的蛋滑嫩，像布丁。

把秋葵切成星星很好看，孩子们看见了都会主动要吃。

冬瓜山药蒸肉

主料：猪肉，冬瓜

配料：山药，葱姜

调味料：酱油，淀粉，食用油

1.葱跟姜放热水里泡成葱姜水。

2.把猪肉跟山药剁成泥状。

3.加入酱油，葱姜水，淀粉搅拌，加入食用油拌匀。

4.冬瓜去掉皮切成片铺在碗底，铺上肉馅，冷水上锅蒸二十分钟。

冬瓜蒸好吸收了很多肉馅的汁液，吃的时候会爆汁。

肉馅里加入了山药，口感软绵，不柴不腻，味道清甜入味。

这道菜口感很温柔，没牙的老人也可以吃。

08

腐竹蒸排骨

主料：排骨

配菜：腐竹，香菇，葱蒜

调味料：酱油，蚝油，白糖，盐，淀粉

1.蒜末泼热油激香，加入酱油，蚝油，白糖，盐调成酱汁。

2.排骨加酱汁跟淀粉抓匀后腌制三十分钟，加入香菇片拌匀。

3.在碗底铺上腐竹，排骨放在上面，上锅蒸35分钟左右。

排骨酱香很浓，轻轻一抿就可以脱骨了，腐竹吸收了肉汁跟香菇的鲜味，比排骨更鲜。

每次做这道菜的时候，我都得多煮一碗米饭。

09

冬瓜蒸肉丸

主料：三肥七瘦的猪肉，冬瓜

配料：香菇

调味料：酱油，淀粉，食用油

1.猪肉剁成肉泥，加入焯熟切碎的香菇，酱油，淀粉，食用油，搅拌。

2.冬瓜去皮切片铺在碗底，肉馅挤成肉丸放在上面。

3.上锅蒸20分钟就可以。

冬瓜蒸好很甜很多汁，肉丸里面加入了香菇，有弹性又有菌香，不油不腻，汤都能喝干净。
