红豆赤小豆别再傻傻分不清，教你如何区别这两种完全不同的豆子

外形篇：一眼看穿“高矮胖瘦”

你进了超市，面对一堆红色豆子，第一步该咋办？看身材！

这招最简单粗暴，也最管用。红豆，属于“矮胖圆”选手， 整体形状比较圆润、饱满，肚子鼓鼓的，像个迷你小红豆，颜色一般是鲜红色或者枣红色，看着就喜庆。

再看赤小豆，这可是标准的“高瘦扁”模特身材。 它的形状是细长的，有点扁，呈长椭圆形。颜色上，赤小豆通常比红豆深一些，偏暗红色或者紫红色，没有红豆那么鲜亮。

大家记住一个口诀就行：圆圆胖胖是红豆，细长扁平是赤小豆。 光凭这一点，你就能在货架上淘汰掉一半错误的选项。

口感篇：软糯香甜vs坚硬难煮

买回家下了锅，区别就更明显了。这也是为啥我老说，做菜得“看豆下锅”。

红豆是个“急性子”， 它特别容易煮烂。哪怕不提前泡水，稍微多煮一会儿，它就“开花”了，变得软糯绵密，轻轻一抿就化成了沙。那种沙沙的口感，就是咱们做豆沙包、红豆沙糖水的灵魂所在。

赤小豆恰恰相反，它是个“硬骨头”。你就算提前泡了一晚上，扔进锅里煮半天，它依然“坚守阵地”，颗粒分明，很难煮烂。吃起来的口感也是偏硬，有嚼劲，有点像在吃没煮透的硬豆子。如果拿它去做豆沙，那纯属跟自己过不去，锅底煮干了它都不会出沙的！

做法篇：甜品搭档与煲汤能手

既然口感天差地别，那它俩在厨房里的“就业方向”也就完全不同了。

红豆，因为口感好，容易出沙，基本承包了所有的中式甜品区。想做红豆沙、陈皮红豆沙、红豆芋圆烧仙草，或者包个软乎乎的豆沙包，认准圆圆胖胖的红豆准没错。煮出来的糖水香甜浓郁，豆沙细腻绵滑。

赤小豆，它更适合用来煲汤、煮粥，或者做那种追求颗粒感的杂粮饭。广东的朋友特别懂，煲老火靓汤的时候，丢一把赤小豆进去，汤水清亮不浑浊，豆子虽硬但别有风味。尤其是著名的祛湿神方“薏米赤小豆汤”，这里必须用赤小豆，你要是换成了红豆，那祛湿效果可就大打折扣了。

功效篇：补血养心与健脾祛湿

虽然都有营养，但功效上侧重不同。

红豆，主打的是补血养心、清热解毒，对女性尤其友好，常吃能改善气血不调，面色红润。心情烦躁、心火旺的时候，来碗红豆汤也挺舒服。

赤小豆，在中医里是正经的药材，利水消肿、健脾祛湿的效果非常强。身体湿气重、舌苔厚腻、总觉得累、水肿的朋友，就得指望赤小豆来帮忙了。正因为它是药材，性质偏硬，所以入药或者做药膳，都得用它。
