菜肴推荐：茶香脆骨、胡萝卜炒豆腐、竹笋口水鸡、蒸酿黄瓜

茶香脆骨

食材：鸡脆骨，茶叶，青红椒，干辣椒，姜蒜片，胡椒粉，蚝油，海鲜酱，排骨酱，酱油，生粉等

做法：

1、在鸡脆骨中加入盐、胡椒粉、料酒等调味料进行腌制入味，然后拍生粉。

2、在锅中倒入油，待油温到五成热的时候，将茶叶下至锅中炸干香，炸至干香捞出待用。

3、在锅中再次倒入油，待油温烧制五成左右，将腌好的鸡脆骨下锅炸至干香捞出待用。

4、锅中留底油，下入干辣椒、青红椒炒香，然后下入炸好的鸡脆骨和茶叶反复翻炒调味盛盘即可。

胡萝卜炒豆腐

材料：北豆腐500克、胡萝卜1根、葱、蒜苗、豆瓣酱、生抽、植物油

做法：1.将豆腐切成长方条，电饼铛内刷油，煎至两面金黄色

2.煎豆腐的同时，将葱、蒜苗切段，胡萝卜去皮切片

3.热锅凉油，放入一勺豆瓣酱炒香，放入葱段、胡萝卜煸炒至变色

4.放入豆腐，放一勺生抽，翻炒均匀，加半杯开水，小火焖煮

5.待收干汁，放入蒜苗段，翻炒出锅即可

竹笋口水鸡

材料：山地土公鸡1只（每份实际用半只，约350克），鲜竹笋50克，花生10克，去皮白芝麻1克。

生抽、白糖、红油各30克，盐5克，味精20克，香油15克，蒜蓉、姜末各10克、花椒面4克，刀口海椒（即炒香后切碎的干辣椒末）、芝麻酱各25克，小葱3克。

做法：

1.将鸡洗净，按上法煮至熟透起锅；鲜笋切片，飞水，放入盘中垫底。

2.将口水料调匀后备用。3.把鸡肉去大骨，砍成大小均匀的条，盖在笋片上面，淋上调好的口水料即成

蒸酿黄瓜

材料：黄瓜、猪肉、葱、姜、味精、精盐、料酒、姜末

做法：

1.将黄瓜洗净，切成段（厚1厘米），去掉黄瓜瓤，备用；

2.葱、姜分别切末备用；

3.将猪肉剁馅放入碗中，加入味精、精盐、料酒、姜末、葱末搅匀，做成肉丸；

4.将肉丸放在切好的黄瓜段内，入蒸锅蒸3分钟；

5.将锅置于旺火上，放入色拉油烧热，加入清汤（500克）、精盐（2克），烧开后用湿淀粉勾芡，淋上在黄瓜段上即可。

粉丝拌菠菜

用料：菠菜900克，粉丝1小把，红尖椒半个，杏仁12个，蚝油少许，芝麻油少许，色拉油适量，食盐4克

做法：

1、菠菜切去根部，清洗干净，切段;粉丝用凉水泡软;烧一大锅水，水开后放进菠菜，加入油、盐，水再次煮开即可捞起放进准备好的凉开水里

2、烫过菠菜的水继续用来烫粉丝

3、把烫熟的粉丝和菠菜捞起，沥干水分，装进大碗里，淋入麻油、加入蚝油，用筷子拌匀，撒上红椒粒和杏仁碎装饰即可

尖椒皮蛋

食材：皮蛋2个、青辣椒、红辣椒、生抽、老抽、盐、白醋、香油

做法：

1、皮蛋切瓣，摆盘

2、青红辣椒切碎，下锅炒，加入盐，蚝油，生抽，老抽少许，带点颜色

3、喜欢辣加点辣椒油，辣椒出锅，铺在变蛋上

干煸杏鲍菇

做法：1、杏鲍菇洗净切片，洋葱洗净切丝。

2、不粘炒锅里加入一勺橄榄油，小火将杏鲍菇片两面都煸成微黄色盛出。

3、将洋葱倒入不粘锅内， 煸出香味，倒入杏鲍菇片一起煸炒。

4、加入盐、生抽、胡椒粉调味，炒匀即可。

爆炒花甲

食材：花甲、蒜 、姜、生抽、剁椒

1，准备材料:花甲用盐水浸泡2小时以上和蒜姜剁成蓉；

2，烧开水，放油和盐，再放入洗净的花甲，花甲焯水后把没有开口的花甲扔掉，没开口的花甲基本坏了的，留下开口的花甲用冷水冲洗一下；

3，烧热油，爆香姜蒜蓉；步骤4，放入花甲，大火爆炒；

5，放入一勺生抽和少许剁椒，翻炒一下盛碟上桌

岭南金牌水蒸鸡

原材料：主料：广东清远鸡1只

辅料：葱5克、姜8克、香葱7克、香菜5克，盐、味精各适量、胡椒粉7克、花雕酒10克、香油8克

1、将清远鸡洗干净，加入葱姜、调料腌制20分钟;

2、腌好的鸡上火蒸25分钟;

3、姜、香葱、盐、香菜、香油、味精捣成泥;

4、锅入底油，将捣好的姜蒜汁倒入锅中炒制熟即可出锅备用;

5、取出蒸好的鸡，旁边配上炒制好的姜蒜汁即可。

东北酸菜炒粉

材料：酸菜 300克、粉丝 50克、姜片 2片、酱油 少许、八角 1枚、盐 少许、干红辣椒 3个、糖 少许、水 150ML、香油 少许、植物油 1汤勺。

1.酸菜切成细丝，用水浸泡10分钟(根据个人口味调整泡的时间)，粉丝用温水泡软备用。

2.锅中加入一汤勺色拉油，小火炒香干红辣椒与八角，然后加入姜丝。加入酸菜翻炒均匀后加入生抽，盐糖翻炒2分钟，加水转大火烧开。

3.加入粉丝焖煮3-5分钟至汤汁收干后淋入香油即可。

卤猪肝

以前经常是在超市买卤制好的猪肝，后来觉得买的卤猪肝大都偏硬，有的甚至还有不熟的感觉，所以决定尝试自己卤制，竟然一次成功。味道绝对比买的好吃，不硬也不腥，添加好调料煮一煮，完全没有负担，厨房小白也能胜任。

【做法】猪肝洗净中间切一刀，放水中浸泡20分钟左右去腥。然后放入锅中，加入足够的水，水大约没过猪肝5厘米。加入盐，八角，香叶和桂皮。加入老抽。加入葱姜。中火煮开，转小火煮40分钟左右。关火。关火后将猪肝在汤中浸泡两三个小时为宜。更入味。捞出切片。可以蘸蒜汁吃，味道更好。

珍珠丸子

1.糯米提前洗净浸泡一夜，捞出沥干；

2.猪肉馅加盐，生抽，料酒，油，淀粉，鹌鹑蛋沿一个方向搅打上劲。再加葱姜末，莲藕末拌匀；

3.肉馅撮成圆球；

4.肉球裹上一层糯米；

5.珍珠元子下锅隔水蒸，水开后继续大火蒸10分钟左右即可。

葱油拌面

食材：面条500g、洋葱1个，油、香油、盐、小葱

做法：

1.小葱切段，洋葱切丝；蚝油、味极鲜、水、盐、糖、香油兑成汁水，倒入锅内煮沸待用。

2.锅内放水，加入盐和油煮沸后，放入面条，煮沸后加入小半碗冷水，再次煮沸即可；煮好的面条放入凉白开中过冷。

3.起油锅，放入洋葱炒香，撒入葱段小火煸炒，使葱香味融合到油里面。拌入面条，淋上兑好的汁水，拌匀就可以吃啦。

蒜薹炒肉

食材：肉丝、料酒、生抽、胡椒粉、淀粉、蒜薹、葱、辣椒

做法：

1.将肉丝用盐、料酒、生抽、胡椒粉、淀粉腌一会儿

2.蒜薹切段，葱和辣椒切好备用

3.锅里热油把肉丝炒变色盛出

4.锅里再倒一点油炒一下葱，把蒜苔和辣椒倒进去

5.加一点水把蒜苔炒软，再把肉丝倒进去炒一会儿

6.最后放一点盐调味即可出锅装盘

姜葱炒生蚝

材料：生蚝若干、姜两三片、葱、盐、生抽、蚝油、酒

做法：1.将葱拍扁切段，分开葱白和葱叶，姜切片

2.生蚝清洗后，烧开一锅水，放进水里烫几下捞出

3.用厨房纸把焯过的蚝吸去水分

4.锅内放少许油，先把姜和葱白爆香

5.放入生蚝，小心翻炒，烹入少许水

6.再加入酒、盐、生抽和一点蚝油炒匀

7.最后放入葱叶段炒软即可熄火

麦饭

1.芹菜摘下叶子洗干净

2.挤干水份切碎

3.加入面粉拌匀，让叶子沾满面粉就可以了

4.入蒸锅蒸10分钟

5.这是调好料汁把蒜泥，生抽，醋，芝麻酱，辣椒油放一起调好

6.时间到蒸好了

腊肉荷兰豆

食材：腊肉、荷兰豆、酱油、料酒、油

做法：1、将腊肉用酱油、料酒、少许醋腌一下后，放微波炉大火5分钟即可；

2、锅下少许油，然后放加工的腊肉煸炒，这是为了让腊肉中的油尽可能炒出来；

3、放入荷兰豆与它一块炒，多翻动。加入加工腊肉时的汤汁，大火收汁即成。

青椒炒鸡蛋

食材：青椒（也可以用红椒、黄椒）3个；鸡蛋2个；盐少许

做法：

1、青椒洗净，沥干水份。去籽。切成颗粒。放入盘子中待用。鸡蛋2个。放少许盐。

2、打散。锅里放油，烧热。将鸡蛋入锅。翻面。用铲子将蛋黄划散。

3、放入青椒碎。翻炒。再放入少许盐。炒匀。起锅装盘即可。

红烧排骨

【食材】排骨、葱、姜、冰糖、盐、老抽、生抽

【做法】

1，排骨洗净，凉水下锅大火煮开后再煮一分钟，捞出用清水淘洗干净。

2，热锅倒入少许油，油热后倒入排骨，大火炒干表面的水分。

3，加入老抽和生抽炒出酱香味。然后再加入清水，大火先煮着。

4，另外起锅倒入少许油，放入冰糖中小火炒至糖液变成红褐色，再加入少许热水，调成糖色。

5，将炒好的糖色倒入排骨中，再加入少许老抽、葱段、姜片、盐、冰糖，小火炖1个小时。

6，排骨熟了，最后大火收一收汤汁即可。

椒香辣炒鸡

食材：三黄鸡一只、干辣子、花椒足量、蒜蓉、姜末、葱花，糖、盐、料酒、鸡精、熟芝麻、油

做法：

1、将鸡块用盐和料酒腌一会儿。

2、干辣子切小段，锅中倒进足量油，下辣子和花椒，出香味在这以后，滤出辣子和花椒。

3、将鸡块放进热油中炸到两面金黄，盛出。

4、留少量油，放葱姜蒜爆香，放进鸡块和辣子花椒一块儿翻炒，放进糖和鸡精，出锅即可。

食材

南瓜250g、排骨250g、大蒜4粒、小葱2颗、生姜适量、料酒一勺、生抽一勺、蚝油一勺、老干妈一勺。

做法

1、小葱和大蒜切末。

2、排骨斩成小块，我是买时就让店家帮我斩的，用清水浸泡半小时去掉血水，再冲洗干净。

3、排骨加入蒜末、生姜丝、料酒、蚝油、生抽、老干妈。

4、抓均匀腌制30分钟。

5、将南瓜去皮切成片，不要切太厚也不要切太薄，免得蒸熟后不好夹，然后围着盘子摆放一圈，把剩下的就摆放在盘子中间。

6、将腌制好的排骨夹放在盘子的中间。

7、蒸锅加水，水开后把南瓜放进去大火蒸半小时。

8、蒸好后取出撒上葱花装饰。
