天冷了，少吃鸡鸭鱼肉！多吃这道菜，蛋白含量超高，再贵也要吃

天一转凉，我就开始想念那种“不用太费劲、却能让人瞬间精神的味道”。以前每到换季，家里就容易走向同一条路线：顿顿大鱼大肉，火锅汤一咕噜，煎炸再来一波……吃得是爽了，可第二天胃里就有点打鼓，整个人也没那么轻快。

所以我每次进菜市场，都会下意识往边边角角找。那些看着不太起眼的菌菇类，往往才是“偷偷救场”的角色。它们蛋白含量不低，鲜味又足，做出来不厚重，汤汤水水的，特别适合早上当早餐，或晚饭给家里来点清爽的。

我家老公和我都爱吃，而且带着孩子也不太挑。更关键的是，这三道菌菇菜，属于那种“材料普通、做法家常、味道却很撑场面”的路子。先把话放这儿，我自己吃了都觉得值。

第一道：平菇鸡蛋清汤，鲜到不需要“重口味”

我最爱这道的点，是它不油不腻。你要是肉吃多了腻得慌，喝一碗这种汤，真的会觉得胃被照顾到了。

食材很简单：平菇一大朵、鸡蛋2个、葱花、生姜少许、盐、香油。

做法也不复杂：

平菇先撕成小朵，冲干净。很多人怕菌菇有土腥味，其实做法很省事：开水下锅焯一分钟，捞出来挤干水分，再炒或者煮都更干净。

鸡蛋打散备用。

锅里放点油，先下姜片炒出香味，再倒入平菇翻一翻，等你闻到那种“菌香冒出来”的味道，就差最后一步了。

加足量开水，大火煮五分钟。然后开始“慢慢淋蛋液”，别急，边淋边轻轻推一推，让它变成蛋花。

出锅前放盐调味，再撒葱花，滴几滴香油就行。

我有次早上给孩子做早餐，孩子喝两口汤就开始惦记下一口。我自己也乐了：原来最香的不是油烟味，是这种清清爽爽的鲜味。

第二道：香菇油菜浇汁，下饭但不算“辣”

说句实在话，油菜这菜有时候容易被嫌弃，说它“没味”。可你把香菇一浇进去，它就立马变成主角。

食材：鲜香菇、油菜一把、大蒜、生抽、蚝油、少许白糖、盐。

第一步，油菜先焯一下。锅里烧水，放一点点盐和几滴油，下油菜焯一分钟就捞出来，摆盘。

第二步，香菇切片，大蒜切末。

热锅少油，蒜末先爆香，再下香菇中火翻炒。炒到香菇出水变软，汤汁开始变得浓一点，这时候就说明味道出来了。

调味上我一般按这个量来：生抽一勺、蚝油半勺，再来一小撮白糖提鲜。盐别一上来就下猛了，蚝油本身就有咸度。

最后，把炒好的香菇连汤汁一起浇在油菜上。

第三道：西兰花口蘑快炒，翠绿脆爽那种

这道属于我个人的“仪式感小菜”。不是因为多高级，是因为它看起来就让人心情好。尤其你把西兰花焯得脆一点，口感立住了，味道就不容易输。

食材：口蘑、西兰花、大蒜、生抽、少许黑胡椒、盐。

怎么做：

西兰花切小朵，泡一会儿再冲洗干净。我图省事会加一点面粉水浸泡十分钟，洗起来更利落。

口蘑切厚片。

锅里烧水，加盐和少许油，西兰花焯大约一分钟，马上捞出来过凉水。翠绿不塌，口感会更脆爽。

热锅放油，蒜末下锅爆香，再倒入口蘑。口蘑很会出鲜汁，别怕，它会把锅里变得“香得很讲究”。

把西兰花倒回去，放生抽和少许盐。想吃更有层次的，可以撒一点黑胡椒。

大火快速翻匀一两分钟就装盘。

我每次做这道都会多咀嚼两口，真的那种脆爽+鲜香的组合，会让你觉得晚饭没白吃。
