做了十几年饭，这8道菜出镜率最高，简单、省事、还特别下饭

守着灶台转悠了十几年，早没了刚学做饭时非要挑战复杂硬菜的执念，最懂过日子的人都知道：能让下班的人推开门就闻着香，十几分钟端上桌，连汤汁都能拌两碗米饭的家常菜，才是自家餐桌上的“常驻嘉宾”。下面这8道我家月度出镜率top的菜，没什么复杂工序，厨房新手看一遍也能零失败。

一、莲藕蒸肉丸

食材：猪肉末、莲藕、葱姜末、生抽、蚝油、淀粉、盐、香油

详细做法：

1、莲藕一半切片铺盘底，一半切碎丁备用；

2、猪肉末加葱姜末、莲藕碎、生抽、蚝油、盐、淀粉、少许香油；

3、朝一个方向搅拌上劲，团成大小均匀的肉丸子；

4、将肉丸整齐摆放在莲藕片上；

5、水开上锅大火蒸18分钟，出锅鲜香软糯、清爽不油腻。

二、土豆烧肉片

食材准备：土豆两个、五花肉220克、生姜、大蒜、干辣椒、生抽、老抽、少许食盐

详细做法

① 土豆去皮切成滚刀块，泡入清水洗去多余淀粉。五花肉切成薄片，姜蒜切片，干辣椒剪段。

② 热锅不放油，下入五花肉中小火煸炒，逼出油脂，炒到肉片卷曲出油。

③ 放入姜蒜、干辣椒炒出香味，加生抽、老抽翻炒，给肉片充分上色。倒入土豆块翻炒片刻。

④ 加入热水没过食材，盖上锅盖小火焖十五分钟，土豆软糯之后，开大火收浓汤汁，放食盐调味即可。

三、肉末蒸鸡蛋豆腐

准备食材：鸡蛋豆腐、猪肉末、小米辣、小葱、蒜。

做法步骤：

1、准备两根鸡蛋豆腐，从中间切开，改刀切成一厘米左右的厚片，均匀地码入盘中。准备适量猪肉末，放入碗中备用。

2、起锅烧油，油热后放入蒜末和小米辣圈，小火煸炒出香味。倒入准备好的猪肉末，用锅铲快速滑散，翻炒至肉末变色。

3、锅中淋入1勺生抽、半勺老抽、1勺蚝油，加入少许盐和白糖调味，翻炒均匀后，倒入小半碗清水，大火煮开。

4、将煮好的肉末酱汁均匀地浇在码好的鸡蛋豆腐上，放入蒸锅，水开上汽后，盖上盖子，大火蒸8分钟，出锅后撒上一把葱花即可。

四、番茄龙利鱼

所需食材：龙利鱼柳300克、番茄2个、番茄酱1勺、姜丝适量、料酒1勺、生抽1勺、盐适量、白糖半勺、葱花适量、食用油适量、淀粉1勺、清水半碗。

步骤：

1.龙利鱼柳解冻后洗净，用厨房纸吸干表面水分，切成约2厘米见方的块状。

2.鱼块放入碗中，加入料酒、生抽、少许盐、姜丝和淀粉，抓匀腌制15分钟去腥入味。

3.番茄顶部划十字刀，用开水烫30秒去皮，切成小块备用，去皮后汤汁更浓郁顺滑。

4.热锅倒油，放入番茄块中小火翻炒，用锅铲轻压帮助出汁，炒成浓稠的番茄泥状。

5.加入番茄酱和半碗清水，煮沸后转中小火熬煮2分钟，让汤底酸甜味更醇厚。

6.轻轻放入腌好的鱼块，不要马上翻动，待鱼肉表面定型后再用铲子背面轻推均匀。

7.加入白糖和盐调味，继续煮2分钟至鱼肉完全熟透，撒葱花即可出锅。

五、清蒸鸡胸肉

所需食材：鸡胸肉1块（约250克）、生姜1块、小葱2根、枸杞10粒、蒸鱼豉油2勺、蚝油半勺、料酒1勺、白胡椒粉少许、玉米淀粉1小勺、香油半勺。

步骤：

1.鸡胸肉从中间横向片成两片薄块，厚度控制在1.5厘米左右，这样受热均匀且容易熟透。

2.用刀背在鸡肉两面轻轻交叉拍打几十下，破坏纤维组织，使肉质更嫩滑入味。

3.碗中加料酒、白胡椒粉、蚝油和玉米淀粉，调成稀糊状，均匀抹在鸡胸肉表面，腌制15分钟。

4.生姜切成薄片铺在盘底，将腌好的鸡胸肉平铺在姜片上，表面放几根葱段和洗净的枸杞。

5.蒸锅添足量水烧开，放入盘子，盖上锅盖，保持大火蒸8分钟，关火后别急着开盖，焖2分钟。

6.取出蒸好的鸡胸肉，倒掉盘中蒸出的汁水（去腥），撒上新鲜葱丝和枸杞点缀。

7.小碗混合蒸鱼豉油和香油，微波加热10秒后淋在鸡肉上，即可切片或直接撕条食用。

六、西兰花拌木耳

材料：西兰花一颗，干木耳一把，蒜末、小米辣（不吃辣的可以不放）、生抽、陈醋。

做法：

木耳泡发后撕成小块，西兰花切成小朵，焯水（可以在水中滴几滴油来保持翠绿色）。

1. 焯好水的西兰花捞出来过一下凉水，这样口感更脆。

沥干水分后，拌入蒜末和小米辣。

1. 淋上生抽、陈醋，再加一点点糖提鲜，拌匀了，静置个5分钟让它入味。

七、莲藕玉米炒虾仁

准备食材:大虾、莲藕、玉米粒、蒜末、葱花。

做法步骤:

1、大虾去除虾线和虾壳，然后加入料酒、胡椒粉抓拌均匀，再腌制十分钟备用。

2、莲藕去皮切薄片，然后把玉米粒准备好，再起锅烧水，水烧开之后，倒入莲藕和玉米粒焯熟，再捞出沥干水分备用。

3、热锅烧油，油热以后，放入腌制好的虾仁煸炒油煎，炒至虾仁变色后，再倒入蒜末和莲藕玉米粒一起翻炒。

4、接着加入适量的食盐和生抽调味提鲜，再继续翻炒均匀入味，然后撒入一把葱花点缀，即可出锅开吃。

八、山药蒸肉片

食材：铁棍山药、瘦猪肉、葱花少许。

做法：

1、瘦猪肉清洗干净，切成均匀的薄片，放入碗中，加入切好的姜丝、生抽、蚝油、淀粉和少许食盐、适量白糖，抓拌均匀，腌制15分钟让肉片充分入味。

2、铁棍山药削去外皮，戴上手套避免黏液刺激皮肤，冲洗干净，斜刀切片。

3、在盘子底部铺上山药片，把腌制好的肉片铺在山药上面，连同腌制的料汁一起倒入。
