寒露吃八鲜，一年病不沾！这8样记得端上桌，顺应节气平安健康

寒露时节讲究"吃八鲜"，顺应时节养生又美味！这里为您整理了8道应季菜肴的详细做法：

一、青椒豆芽炒鸡蛋

准备食材: 青椒、绿豆芽、鸡蛋、蒜末。

做法步骤:

1、鸡蛋打入碗中搅拌均匀，接着热锅烧油，油热以后，放入鸡蛋液油煎滑熟，再盛出备用。

2、清洗干净青椒和绿豆芽切好，然后热锅烧油，油热以后，放入蒜末爆香，接着倒入青椒一起翻炒。

3、炒软青椒后，再加入豆芽一起翻炒均匀，接着加入适量的食盐调味，然后淋入少许的清水继续炒软豆芽。

4、最后加入煎好的鸡蛋一起翻炒均匀入味，即可出锅开吃。

二、沙葱爆羊肉

食材：羊肉片、新鲜沙葱、小米辣、生抽、料酒、孜然粉、盐、少许食用油

做法：

1. 羊肉片加少许料酒、生抽抓匀腌制5分钟，去腥又入味；沙葱切段备用。
2. 大火热锅多放少许油，下入羊肉片快速滑炒，炒至变色立刻盛出备用。
3. 锅底留油，放入小米辣、沙葱根部爆香，倒入炒好的羊肉。
4. 撒上足量孜然粉、少许盐，大火快速翻炒均匀，最后放入沙葱叶翻两下出锅。

三、牛肉丸炒青椒

食材： 牛肉丸200克、青椒3个、蒜末、姜丝、生抽、蚝油、盐、油

做法：

1、牛肉丸切片或切块；青椒去籽切块。

2、热锅倒油，下牛肉丸煎至表面微焦，盛出。

3、锅中留底油，爆香蒜末姜丝，下青椒大火翻炒1分钟。

4、倒回牛肉丸，加生抽、蚝油、盐。

5、大火翻炒均匀即可出锅。

6、牛肉丸先煎一下，更香更弹。

四、虾仁滑蛋

食材：鲜虾仁 150g、鸡蛋 3 个、葱花少许

调料：少许盐、水淀粉

做法：

1、虾仁去虾线洗净，厨房纸吸干水分；鸡蛋打入碗中，加少许盐、少量清水搅匀。

2、锅中放少量油，小火倒入蛋液，待蛋液微微凝固，放入虾仁。

3、慢慢推动蛋液，小火滑炒至虾仁变红、鸡蛋嫩滑，撒葱花出锅。

五、花生眉豆煲鸡脚

食材：花生一小把、眉豆一小把、鸡脚六只、猪扇骨三四块、姜三片、陈皮一瓣、盐少许

做法：

1、花生眉豆洗净，清水泡两个钟头。泡的水别倒，连着一起下锅，颜色都在这水里。

2、鸡脚剪去指甲，猪扇骨剁成块，一起冷水下锅，搁两片姜煮开，撇静浮沫，捞出来在冲一遍。

3、陈皮温水泡软，里头那层白瓤刮掉，不刮汤发苦。

4、花生、眉豆、鸡脚、扇骨、姜片、陈皮一起进砂锅，添足水，大火烧开转小火，煨一个半钟头。

5、出锅前搁盐。汤面那层油撇掉，喝起来不腻。

六、凉拌秋葵木耳鸡丝

食材

鸡胸肉1块、秋葵8根、干木耳一小把、蒜末、小米辣少量

调味：生抽半勺、香醋半勺、少许盐、白芝麻

做法

1. 干木耳温水泡发；鸡胸肉冷水下锅，放姜片去腥，水开小火煮10分钟，关火焖5分钟，捞出放凉撕成细丝。
2. 秋葵洗净，切掉蒂部，和木耳一同放入沸水焯水2分钟，捞出过凉水，秋葵斜切成段，木耳撕小朵。
3. 把秋葵、木耳、鸡丝放入大碗，加入蒜末、小米辣。
4. 生抽、香醋、盐混合调成料汁淋入，撒白芝麻，充分拌匀静置2分钟入味。

七、蒜蓉西兰花（清爽快手）

食材：西兰花1颗、大蒜5瓣；生抽1勺、蚝油1勺、盐1/4勺

做法：

西兰花掰小朵，盐水浸泡10分钟，沸水焯1分钟捞出

热锅冷油下蒜末，小火煸至微黄（大火易糊），蒜香最浓

倒入西兰花，转大火加调料翻炒1分钟，菜梗微微透明即可出锅

八、山药炒木耳（润燥养胃）

食材：铁棍山药350克、干木耳15克、青红椒各半个、蒜末5克、盐3克、蚝油8克、香油5毫升

做法：

木耳冷水发（加面粉更干净），山药去皮切段，泡淡盐白醋水防氧化

烧水焯木耳1分钟、山药30秒，捞出过冰水锁脆

热锅凉油爆香蒜末，下青红椒大火快炒10秒
