中伏后少吃西瓜和冬瓜，多吃它，湿气跑了气血足了睡得更香了

中伏过后，天气闷、黏、燥，人也跟着发懒，老想着拿冰西瓜、冬瓜汤顶一顶，可真要天天这么吃，肚里未必舒坦。原文的核心意思很明白：夏天别一味贪凉，餐桌上要把寒凉瓜果收一收，多换成热炒、清淡、好消化的家常菜，像番茄炒鸡蛋、秋葵、包菜炒鸡蛋这种，菜市场随手买得到，半小时就能上桌，既照顾口味，也顾着身体。文章主线就是围绕一个词，顺时节吃饭，别让一时的痛快，换来晚上的翻腾和第二天的发沉。

中伏这几天，山东这边的闷热，真不是一般人能扛的。白天一出门，热浪往脸上一扑，跟进了蒸笼似的，晚上回到家，空调开着，人还是觉得身上发黏，提不起劲。很多人这时候就犯一个老毛病，觉得越凉越好，冰西瓜切半个，抱着勺子挖，冬瓜汤一盆接一盆，图的是嘴里痛快。可嘴上痛快了，肠胃却未必买账，尤其是家里有老人、小孩，或者本身脾胃就弱的，吃得太寒，容易出现肚子胀、没胃口、睡不沉这些事。

这不是吓唬人，老辈人讲，夏天吃饭要讲个平衡。中医里常说夏季暑湿重，脾胃最怕又冷又黏的东西。现代营养学也能说得通，冰镇瓜果吃多了，胃部温度下降，消化液分泌和胃肠蠕动都会受影响，饭后发困、肚子不舒服，不少人都有体会。尤其是晚上，睡前还来一大块冰西瓜，血糖起伏不说，肠胃还得加班干活，难怪翻来覆去睡不踏实。

我自己前阵子就中招了。天气一热，家里冰箱里的西瓜没断过，白天图凉快，晚上也忍不住来两口。结果就是人一天比一天沉，坐那儿不想动，晚上躺下以后，脑子不困，身子却发飘，睡得一点不实诚。后来我就把家里的吃法改了，先把冰镇的习惯放一放，餐桌上多换几道热乎的小炒。别说，真不是心理作用，胃里舒服了，人也跟着轻快些。

这三道菜，我家里常做，都是家常到不能再家常的东西。番茄炒鸡蛋，秋葵，还有包菜炒鸡蛋，哪一样都不贵，关键是做起来不费劲。咱山东人讲究实在，吃饭不整那些花里胡哨的，鸡蛋就是鸡蛋，番茄就是番茄，吃进嘴里有滋味，吃完肚里还顺当，这就够了。

先说番茄炒鸡蛋，这道菜在中国家庭里几乎没有对手。有人把它当下饭菜，有人把它当救急菜，忙起来没空做复杂的，炒一盘就能顶一顿。番茄最好挑熟透的，捏着微软，颜色红得透，炒出来汁水足，酸甜味儿能出来。鸡蛋打散时加一点点清水，炒出来更松软，这个做法很多老厨子都用。热锅倒油，鸡蛋先滑炒出来，别老是反复翻，等定型了盛出来。再下番茄，小火慢慢炒，炒到出沙、出汁，再把鸡蛋倒回去，撒点盐，来点葱花，立马就有家里的味道。

这菜看着简单，可它适合夏天，不油不腻，酸味还能开胃。闷热天里，人最怕没食欲，端上这么一盘，米饭都能多扒两口。要说注意点，也有，番茄别放太多糖，尤其家里老人和血糖不稳的人，甜味重了反倒不合适。趁热吃也很重要，凉了以后，味道就少了一层，肠胃也不舒服。

再说秋葵。前些年很多人不太习惯这菜，觉得黏黏的，不像北方传统菜那样利索。可真吃顺嘴了，会发现它有它的好。秋葵含水量高，膳食纤维也不少，夏天吃起来不重口，不容易腻。做法更是省事，洗干净，根部切掉一点点，别切破表皮，不然里头的汁水容易流出去。水开后滴几滴油，再下锅焯两分钟，时间不能长，长了就软塌塌的，口感发蔫。焯好以后过一下凉水，颜色会更翠，吃着脆嫩。摆盘，撒蒜末，淋生抽，最后浇一点热油，香味一下就上来了。

秋葵这东西，争议也不小。有人嫌它黏，有人觉得就是这点黏才顺口。其实从营养上看，它的黏液里有可溶性膳食纤维，吃的时候对肠道也友好。可凡事不能贪多，消化能力弱的人，一次别夹太多，免得肚子里发胀。家里有老人时，我一般会少放蒜，热油也别太重，吃的是清爽，不是刺激。

第三道是包菜炒鸡蛋，这菜在我家属于冰箱清货型选手，孩子爱吃，老人也能嚼得动。包菜这东西，价钱实在，耐炒，脆生生的，夏天拿来快炒，最能出味。先把鸡蛋炒熟盛出来，火腿肠切薄片，包菜撕成小块，洗净后一定要沥干，不然一炒就出水，成了炖菜。热锅少油，蒜末爆香，包菜下锅大火快炒，火要足，手要快，炒到微微软就行，保留脆劲儿。再放火腿肠，最后把鸡蛋倒进去，撒盐翻匀，出锅。

这道菜有个讲究，火腿肠本身含盐量不低，盐一定要少放，不然吃起来咸口压过了包菜的清甜。很多家里做菜容易犯这个毛病，觉得夏天没胃口，就下手重一点，结果一顿饭吃得嘴里发干，晚上还渴得厉害。其实越是闷热天，越该把口味收住一点，清爽一点，身体反而轻省。

现在不少人一到夏天，饭桌思路就跑偏了，总想拿凉菜、冷饮、冰镇水果去对付高温。问题是，凉快只是嘴巴和舌头那一会儿，身体内部未必受得住。尤其是冰西瓜，很多人一吃就是半个，图的是过瘾，可西瓜含糖不低，水分又多，空腹吃太多容易撑着，晚上吃太晚还影响睡觉。冬瓜也一样，清淡是清淡，天天只靠它顶饭，蛋白质、脂肪、主食跟不上，人照样没精神。

咱家做饭，讲究的不是排场，是一家人都能吃得舒服。山东人吃饭有个特点，桌上得有热乎气。哪怕是夏天，也不能全靠冷食。锅里过一遍，油里走一遭，香味一出来，家里人围上桌，孩子捧着碗，老人吃得顺口，饭菜的意义就不只是填肚子。更何况，这几样菜都不挑门槛，菜市场一趟全能买齐，鸡蛋、番茄、包菜、秋葵，花不了多少钱。

也有人问，夏天到底该怎么吃才合适。说复杂了大家嫌烦，说简单了又怕漏掉重点。其实就盯住一个原则，少寒凉，多清淡，别把肠胃当铁打的。中伏以后，天气常常最闷，这时候人的食欲本来就会下降，胃口差时更不要猛灌冷饮、猛吃寒瓜。可以把主食吃扎实一点，米饭、面条、杂粮搭配着来，菜上多一些番茄、包菜、丝瓜、冬瓜、青椒这类清爽食材，做法以炒、焯、炖为主，少油少盐。这样吃，身体不容易发沉，白天干活有劲，晚上睡觉也更踏实。

家里有两个小子，正是长身体的时候，我做饭更不敢随便糊弄。孩子喜欢吃得香，但香不等于重油重盐。番茄炒鸡蛋一端上桌，他们总能先把汤汁拌米饭；包菜炒鸡蛋火候到位，脆脆的，嘴里嚼着有响动；秋葵如果切得好、焯得好，也能被孩子夹走不少。老人吃饭则看重软和和顺口，番茄的酸甜、包菜的清爽、秋葵的细嫩，都合适。这样一桌饭，老中青都能照顾到，才算像个家。

夏天吃饭这事，说到底不是比谁能忍，是真得会搭配。光图凉快，不管身体，到了夜里身体来找你算账，那才叫不划算。餐桌上的几道家常菜，做法不难，食材也不贵，火候和搭配稍微用点心，吃进去的就是舒服。像番茄炒鸡蛋那种带着酸香的热乎菜，包菜炒鸡蛋这种脆爽利索的快手菜，再加上一盘清清爽爽的秋葵，闷热天里摆上桌，心里就不慌了。家里人吃得安稳，饭碗端得踏实，这日子才像样。
