玉米山药排骨汤，暖乎乎喝完整个人都舒服

上周降温下了班走在路上冻得直搓手，突然想起我妈炖的玉米山药排骨汤，以前每次降温她都炖一大锅，我捧着碗蹲在餐桌边，汤还冒着热气就能喝下半碗，暖得从嗓子眼到胃里都舒服。回家翻了翻冰箱，刚好有上次逛超市囤的肋排，还有两根快放干的玉米和一根山药，赶紧给我妈打了个视频讨做法。

之前我自己炖排骨总觉得腥，汤喝着也寡淡，这次按着我妈说的步骤来，没想到炖出来的汤奶白奶白的，排骨一抿就脱骨，连我室友闻着香味都凑过来要了一碗。

其实做法真没什么难的，肋排就剁成小块，冷水下锅丢两片姜倒一勺料酒，开小火慢慢煮，别盖盖子，等血沫都浮起来了用勺子撇干净，再煮个五六分钟捞出来用温水冲干净，我妈说千万别用冷水冲，不然肉质发柴炖不软。

把洗干净的排骨丢进砂锅，倒满开水，丢两片姜一个拍散的八角，盖盖子小火炖四十分钟，炖的时候别总开盖，汤不容易白。等着的功夫就把玉米切成段，山药削了皮滚刀切成块，怕山药氧化就泡在清水里。等排骨炖够时间了，把玉米和山药丢进去，再炖二十分钟就行，最后出锅前撒点盐，别的调料都不用放，原味最鲜。
