年糕炒豆腐

材料：黑豆豆腐、年糕片、酱油、蚝油、淀粉、砂糖、韩式辣酱、葱花、油

做法：1.锅中放入适量的油烧热，放入黑豆豆腐，煎至两面金黄。

2.倒入适量清水，放入年糕片大火烧开，小火煮五分钟。

3.烧豆腐的时候调汁，碗中加入酱油、 蚝油、韩式辣酱、淀粉、砂糖、清水搅匀备用。

4.年糕煮软后，倒入料汁，煮至汤汁浓稠。

5.放入葱花，轻轻翻炒均匀。

6.出锅装盘，撒入少许葱花即可。

江蟹蒸蛋

食材：鸡蛋、江蟹、葱姜、料酒、盐、生抽、食用油

做法：

1、江蟹去壳斩块，去除腮和杂物，加料酒、食盐、姜丝腌制15分钟；

2、打入五个鸡蛋划散，加入2小碗的水拌均，和江蟹一起放入蒸碗内；

3、蒸锅内水烧开，放入鸡蛋液蒸煮20分钟；

4、取出，撒上适量葱花，少许生抽，最后再淋点热油到葱花上即可。

向日葵炒饭

隔夜剩米饭500克；鸡蛋4个；豌豆100克；胡萝卜1根；香菇3朵；火腿肠1根；淀粉1汤匙（15克）；清水1茶匙（5ml）；油6汤匙（90ml）；盐1茶匙（5克）；

步骤1将隔夜剩米饭从冰箱里提前取出，放于室温下，自然回温。香菇泡发后切成小丁，胡萝卜去皮切成小丁，火腿肠也切成同等大小的丁。把鸡蛋打散，用清水将淀粉溶解后，倒入鸡蛋液中，充分搅匀。锅中倒入清水，淋入一点点油，水开后放入豌豆焯烫30秒钟后捞出，过冷水后沥干水分备用。

2平底锅中倒入油，大火加热，待油8成热时，倒入部分蛋液，刚好够将鸡蛋摊成一个博饼即可，转动锅子，使蛋饼变得均匀而平整，烙好一面后，用铲子翻面，将另一面也烙成金黄色盛出。继续重复这个步骤，将所有蛋液都摊成薄薄的蛋饼即可。

3将蛋饼放在案板上，切成细条，边缘的饼边，则用来切成尖角状（图6）。锅中倒入油，烧至7成热将胡萝卜丁，香菇丁和火腿丁放入，炒2分钟后加入米饭先用铲子压散，再不停地翻炒，直到米粒变得干爽有弹性，调入盐翻拌均匀即可。将炒好的米饭盛入碗中，倒扣在盘中，然后用鸡蛋条按照网状编织的方法，摆放在米饭上，最后在盘子的边上摆上叶子，最后将焯烫好的豌豆点缀在网格中即可。

肉末蒸鹌鹑蛋

做法1.将猪瘦肉放在面板上剁成末，放入碗中加入1小勺盐搅拌，腌制10分钟。

2.葱白葱青分开各切成末，蒜瓣切成末，姜切末备用。如果不喜欢吃姜，也可以把姜切成丝泡入凉开水中，去姜丝用姜水。

3.胡萝卜洗干净去皮放在面板上剁碎，加入一小勺盐腌制10分钟。

4.瘦肉腌制好后，加入葱白葱青末的一半，2勺生抽、1勺蚝油、1勺料酒，姜末或生姜水，胡萝卜沥出的水分顺着一个方向搅拌上劲，然后放入胡萝卜末搅拌均匀。

5.取一小勺调好的肉馅，用手团成圆形。

6.待肉馅全部团成丸子后，在中间扒个洞。

7.在每个小洞里面打入一颗鹌鹑蛋，做肉丸的时候不要做得太小，不然鹌鹑蛋蛋液容易流出。放在蒸锅上大火蒸20分钟。

8.汤碗中盛半碗水，加入适量食用盐、生抽、蚝油、玉米淀粉搅拌均匀。炒锅放底油，油热放入葱蒜末炒香，注意火候不能把葱蒜炒焦，放入调好的料汁，熬到汤汁变稠，均匀的浇在蒸好的菜品上，撒上葱叶末完美出锅。

五花肉烧素鸡

用料：五花肉500g、素鸡500g、葱、姜、辣椒和青蒜适量、八角1个、桂皮1节、生抽酱油适量、红烧汁适量、油和盐适量；

做法

1.准备食材。中火热锅热油，加入葱、姜、辣椒炒香后加入五花肉炒制变色。

2.加入酱油和红烧汁炒匀后加入八角、桂皮、盐和适量的水，中小火炖20分钟左右。

3.大约20分钟后（或者水还有一半的时候）加入素鸡翻炒均匀，继续中小火再炖10分钟左右或直到汤汁收得差不多了。

4.拌入青蒜关火就即可出锅了。

回锅肉

主料：五花肉300克、青椒1个、蒜苗50克

配料：豆瓣酱10克、豆豉5克、生抽10毫升、八角2个、葱花5克、姜末5克、糖3克、蒜苗20克

回锅肉的做法

1、锅中加入清水，凉水把洗净的五花肉下入锅中，八角2个、大火烧开转小火煮10分钟。

2、把煮好的五花肉凉透，切成5毫米左右的薄片，装入盘中备用。

3、锅中加入少许底油，油温5成热的时候，下入葱花5克、姜末5克、小火翻炒出香味，下入切好的五花肉片，大火翻炒几下加入豆瓣酱10克。

4、锅中加入豆豉5克、生抽10毫升、中火翻炒使五花肉上色。

5、锅中五花肉炒熟了后，加入洗净的青椒块、蒜苗段、翻炒均匀后加入白糖3克，翻炒至五花肉熟透，就可以装盘食用了，这道既好吃又下饭的回锅肉就做好了，小伙伴们学会了吗。

干煸杏鲍菇

食材：杏鲍菇2个；食盐1/2茶匙酱油1/2汤匙蒜2瓣干辣椒4个蚝油1/2汤匙植物油2汤匙细香葱2根白芝麻1茶匙；

做法：

1.准备材料，干辣椒切段、蒜切粗米、香葱切花；

2.杏鲍菇洗干净后用手撕成条；

3.放入开水锅中迅速地焯水；

4.焯好后沥干水备用；

5.白芝麻放平底锅中小火炒熟，盛出来备用；

6.平底锅中放适量植物油、放入焯好的杏鲍菇，煸炒至表面呈焦黄色，也盛出来备用；

7.重新起锅，放少许植物油烧至五成热，放入干椒段、蒜粒和葱白爆香；

8.再放入杏鲍菇一同煸炒，放盐、酱油和蚝油调味；

9.翻炒均匀后加入芝麻和香葱即可；

橘香手撕鸭

食材：土鸭1只（净重1500克），鲜橘皮丝15克。卤水1千克，干红辣椒25克，芝麻、香葱段、大蒜片、辣鲜露各5克，橘香油15克，色拉油2千克（约耗50克），腌料（葱段、姜片、料酒各20克，盐8克）。

做法：1.土鸭宰杀治净，切成重25-30克的大块，冲水30分钟，加入腌料腌渍30分钟，焯水。

2.将鸭块放入卤水中，大火烧开，改小火卤10分钟，离火浸泡5分钟，捞出控汤。

3.锅内放入色拉油，烧至六成热时，放入鸭块，小火浸炸至色泽金黄，取出控油。

4.锅内放入橘香油，烧至五成热时，放入香葱段、大蒜片、鲜橘皮丝、干红辣椒爆香，下入鸭块、辣鲜露、芝麻，大火翻拌均匀，出锅装盘即可。

金针菇烧豆腐

食材金针菇、日本豆腐、豆瓣酱、青红椒、葱姜蒜、鲜菇、盐、生抽、蚝油、鸡粉、淀粉

做法1、金针菇切掉根部洗一下，入锅焯软备用；日本豆腐切成小块；豆瓣酱剁碎否则影响口感和卖相；青红椒切丝；香菇切片。

2、豆腐均匀的裹上淀粉，起锅烧油，油温升高后，放入豆腐煎至两面金黄备用。

3、再次起锅烧油，油热之后加入葱姜蒜末炒香，再加入豆瓣酱炒几下，放入切好的香菇翻炒。

4、香菇炒至变软之后加入适量的盐、生抽、蚝油炒匀后加入适量的水。

5、水开之后加入煎好的豆腐，一起焖煮一小会，然后加入金针菇、青红椒丝轻微的翻炒。出锅之前加入鸡粉，调入水淀粉即可享用。

腐竹拌黄瓜

材料：腐竹；黄瓜；食盐；生抽；香油；白醋；白糖；

做法

1、腐竹先用凉水泡发，将腐竹放入沸水焯熟，捞出用凉水过凉，挤干水分后切成小段；

2、黄瓜洗净后切成细条，把腐竹和黄瓜放入碗中，加入醋、酱油、白糖、盐和香油搅拌均匀即可；

西兰花炒虾仁

材料：西兰花、胡萝卜、虾、料酒、盐、油、蒜

做法：1、西兰花洗净掰一下，放盐水里泡片刻

2、虾处理干净，胡萝卜切成片状，准备好蒜泥

3、把浸泡好的西兰花放开水里焯一下

4、油烧热后，放蒜爆香，放虾仁加少许料酒

5、焯好的胡萝卜和西兰花放进去一起翻炒，最后加盐就可出锅了。（可以加点香油）

海鲜疙瘩汤

原料：面粉、油菜、虾、香菇、盐、鸡精、葱、姜、高汤、胡椒粉

做法：1、虾、蛤蜊、香菇、油菜洗净备用，虾、蛤蜊放入锅中微煮一下，捞出备用。

2、将煮过海鲜的汤放置5分钟沉淀以后，将清汤倒入碗中备用。

3、将面粉放入大碗中，逐渐将冷水加入面粉内，用筷子搅拌成疙瘩。

4、起油锅，爆香葱姜，加老汤，放入香菇，放入疙瘩，并用勺子搅拌避免粘连，开锅后加入虾、蛤蜊、油菜。加煮过海鲜的汤，用适量的盐、胡椒粉、鸡精调味即可。

青红椒炒菜花

材料：菜花、油、盐、青椒、红椒、蒜、蚝油、糖

做法：1.将菜花洗净，切成小块，蒜切末，青红椒切块备用。

2.菜花放入盐水中，浸泡10分钟。

3.锅中倒入小半锅清水烧开，加入一勺盐、适量的油，放入花菜焯水3分钟，捞出。

4.炒锅烧油，放入蒜末炒出香味，倒入菜花，翻炒20秒。

5.加盐、糖，放入青红椒翻炒至断生。

6.倒入适量的蚝油，将菜花炒熟即可出锅。

爆炒猪肝黄瓜

材料：猪肝、黄瓜、红椒、洋葱、淀粉、葱姜蒜、生抽、老抽、盐、糖、鸡精、胡椒粉；

做法：

1.黄瓜切两半，黄瓜心去掉；黄瓜一口，抹刀一片；用盐腌制，可让黄瓜口感脆韧；猪肝切薄片猪肝切好后加盐、料酒、高度白酒腌制红椒，洋葱改刀用厨房用纸把猪肝血水吸出来；

2.碗汁：葱姜蒜+生抽+老抽+盐+糖+鸡精+淀粉+胡椒粉+一点纯净水；把黄瓜水沥出来；猪肝入锅前加入淀粉，可让猪肝脆嫩；

3.锅里放油烧热，倒入猪肝炒散+红椒+洋葱(红椒 ，洋葱熟了，猪肝就熟了)，烹入碗汁(留一点)，加入黄瓜+剩的一点碗汁，加入香油，最后烹入高度白酒(腥膻味就全部出去了)，一道美味的爆炒猪肝就完成了；

西芹炒鲜鱿

材料：西芹小把、鲜尤二只、青红椒各一个、料酒、蒜、盐、鸡粉、生粉

做法：

1、西芹切小段改丝，青红椒切丝，鲜尤为使入味，先将尤鱼横刀连刀切，再直刀切丝；

2、将以上物料(西芹、青红椒、鲜油)，入水烫八分熟起锅；

3、热锅冷油至热，入蒜片爆香，倒入己烫的丝料同炒，加入盐、鸡粉、生粉水，快速翻炒，出锅前加点料酒即可。

做法：
